Skillet Sweet & Sour Chicken
Shredded, cooked chicken (3 breasts or more)
1 onion, sliced
1 green pepper, sliced
15 oz pineapple chunks (drain the juice)
2 Tbsp ketchup
1 Tbsp white vinegar
1/4 cup cornstarch
2 Tbsp soy sauce
Cooked rice
Saute onion and pepper or cook in water until soft on medium heat. Add chicken and pineapple.
Mix ketchup, vinegar, cornstarch, and soy sauce with whisk until well combined and not clumpy. Add to chicken mixture. Add more cornstarch, if desire a thicker texture. Continue to cook on medium heat until you have the desired texture. Serve over hot rice.
