Skillet Macaroni and Cheese

1/4 cup butter

1/2 cup chopped onion

1/2 cup chopped green bell pepper

1 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon dry mustard

1/8 teaspoon leaf oregano

2 cups water 

1 3/4 cups elbow macaroni

1 Tablespon flour

1 large can evaporated milk

2 cups shredded cheese


Set fry pan at simmer and melt butter.  Add onion and green pepper, saute until ender.  Stir in spices.  Turn temperature to medium or 260 degrees.  Add water and macaroni and bring to a boil.  Cover and simmer at 212 (low) for 20 minutes or until macaroni is tender.  Sprinkle flour over mixture and blend well.  Stir in evaporated milk.  Cook 5 minutes at simmer.  Add pimento and cheese. Heat, stirring occasionally until cheese has melted (do not boil).
