Red Beans & Rice
Polish Sausage-one brand we've used is Johnsonville
1 red pepper, diced
1 onion, diced
1-2 cans Kidney beans
1-2 cans diced tomatoes (if you like spice, you can use tomatoes with Green Chilies)
Slice sausage and saute, add vegetables, beans and tomatoes and let cook until desired consistency. Cook in butter or water. The longer they cook, the more moist and the better flavor throughout.
Serve over rice.
We also like to serve with a side of Mac & Cheese. Sometimes we go all out, but mostly just use boxed Mac & Cheese. Everyone's happy! Tag us if you try it! One of our favorites! #jaynesamanthajs #inspirefuntraditions
