Rachel's Cinnamon Rolls

2 Tablespoons yeast

1/4 cup warm water

1 1/2 sticks butter or margarine, melted (8 tablespoons for the bread part, rest to melt with cinnamon and sugar mixture).

1/2 cup dry instant mashed potatoes mixed with 3 cups warm water

2/3 cup sugar

2 teaspoons salt

1 cup dry nonfat milk

4 eggs, lightly beaten

About 10 cups flour 

 

Cream Cheese Frosting:

3 ounces cream cheese

1 cup butter

1 package powdered sugar (or as needed)

1 tablespoon water

1 teaspoon vanilla

 

Dissolve yeast in 1/4 cup warm water. When yeast is foaming, mix with 8 tablespoons butter or margarine. potato water, sugar, salt, dry milk, eggs, and 8 c. flour.

 

Mix until a ragged dough begins to form-adding flour as needed.

 

Turn out and knead for 5 minutes (or knead in mixer).  Let rise until double (1-2 hours) in greased bowl (I just let it rise in my mixer).

 

Roll into a rectangle (should be about 1/2 inch high).  Brush with melted butter.  Then sprinkle a mixture of sugar and cinnamon on top of the melted butter (use mostly brown sugar with a little bit of granulated-white-sugar).

Roll, cut and place on a greased cookie sheet.  Let rise for 45 minutes.  Frost with cream cheese frosting.

 

Bake at 375 for 18-20 minutes.
