Mandarin Orange Salad

1/2 cup sliced almonds

3 Tablespoons sugar

1 can mandarin oranges

2 green onions, sliced

1 cup chopped celery

1/2 head romaine lettuce

1/2 head iceberg lettuce

 

Dressing:

1/2 teaspoon salt

dash pepper & tabasco

1/4 cup salad oil

1 Tablespoon chopped parsley

2 Tablespoons sugar

2 Tablespoons vinegar

 

Heat a small skillet on medium high heat.  Add sliced almonds and 3 Tbsp sugar and still until dissolved and coated (caution, it burns fast).  Remove from pan immediately and add to salad items.  ( I usually put mine on a pan lined with parchement paper.  Once they cool, I put them in a bowl since everyone doesn't like to eat them.)

Mix dressing ingredients together.  Pour over salad just before serving.

Can add cooked chicken to make it a main course salad.
