Chocolate Mousse Pie
2 squares unsweetened chocolate (or 2 oz)
1 cube butter, softened
3/4 cup sugar
8 oz. cool whip
Melt chocolate and let cool. (I melted mine in the microwave for 30 seconds at a time). Cream butter and sugar then stir in chocolate. Add 1 egg, beat for 5 minutes. Add 2nd egg and beat an additional 5 minutes at high speed.
Fold in cool whip and pour into pie shell. Chill in fridge until firm-at least 2 hours.
My sister, Rachel, doubles this recipe and puts it in one deep dish oreo crust pie shell.
25 Oreos, crushed
6 Tablespoons butter, melted
Mix together and press into pie pan. Cook at 350 degrees for 8 minutes. Let cool.
