Buttermilk Pie

When we lived in Oklahoma, my mother and father in law were in Texas on a church mission.  We went to visit them for Christmas and this is one of the southern desserts they served for us.  It has been a favorite in our family ever since.  Especially for my husband.

2 cups sugar

1 1/2 Tbsp. flour

1 cube butter, softened 

3 eggs, beaten

pinch of salt

3/4 cup buttermilk

1/4 tsp. soda

1 tsp. vanilla

1 tsp. white vinegar

9" pie crust

Preheat oven to 350.  Bake pie crust for 10 minutes.

Combine sugar and flour.  In a separate bowl, cream butter and add sugar mixture, beaten eggs, salt, buttermilk, soda, vanilla, and vinegar.  

Pour mixture in baked pie crust.  Bake at 350 for 45-50 minutes.  Custard should be somewhat set and top is medium brown.
